Caramelised-Onion and Goats Cheese Pizza

Pumpkin is Marks favourite food (along with kumara mango and more), so recipes that highlight the sweet flavour of pumpkin or butternut are always a hit in the Deverauxxx house. Check out the Cherry Tomato, Pancetta and Bocconcini Pizza too.


1/2 butternut pumpkin, cubed into 2cm pieces
olive oil
50g butter
3 large red onions, thinly sliced
1 large red chili (optional), sliced (remove seeds for a milder taste)
120g goats cheese
1 tablespoon small rosemary sprigs, bruised
Place pizza stones in oven and preheat oven to 220C°. Place pumpkin on an oven proof baking tray, drizzle with olive oil. Cook for 15-20 minutes, turning every 5 minutes until golden. Meanwhile melt butter in a heavy based saucepan over a low heat, add the onions and cook for about 20 minutes until softened.
On a clean work surface double the wraps to make two pizzas. One each pizza spread a half the onion, top with pumpkin cubes, sliced chili. Crumble half the goats cheese evenly over each pizza and sprinkle with rosemary leaves. Place each pizza on a hot pizza stone and cook for 5-10 minutes or until the base is crispy and the cheese is softened.
