Cherries Wrapped in Bacon

This simple recipe from mum is a family favourite, and are often made them as a quick snack and to pass the time on lazy afternoons on her boat Zinkwazi. I suggest making a large batch, they don’t last long, especially when Rob grabs handfulls of them and gobbles them down.




ingredients
1 large jar preserved pitted cherries
1 packet streaky bacon strips, or pancetta
toothpicks
Roll each cherry in a strip of bacon, spear with a toothpick to hold in place and bake in a hot 220°C oven until crispy. Serve while hot. Simple.

You can get it from Wiggly Tail Pork Shop & Butchery. You can call 6559 9057 to find out the nearest butcher to you that will sell it but expect to pay about $16-$18 / kg
